Ingredients

2 2/3 cup yogurt, plain
1 cucumber, peeled & grated
2 tbsp mint, fresh, finely chopped
1/2 tsp cumin seeds, roasted
1/4 tsp cayenne pepper
1 tsp salt
1/4 tsp black pepper


Directions

Put the yogurt in a bowl. Beat lightly with a fork or
whisk until smooth and creamy. Add all the other
ingredients and mix. Cover and refrigerate until ready
to eat.

The introduction of these new foods and spices led to an outbreak in manuscripts on cooking, most of which still exist in private cookery archives.

During the following few hundred years, the upper-class families of Wesstern Europe competed to serve the best banquets, and consequentially chefs and their recipe collections were greatly in demand. Nevertheless, it was during the 1800s that cooking and recipe books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collating, testing, and publishing recipes to allow everyone to enjoy them.

The arrival of television brings us TV cooks and the spin-off recipe books.
