The History of Recipes
We can track the history of written recipes back into distant history, certainly as far into history as the Egypt of the Pharoahs, and maybe even further. Interesting though that maybe, mostly, these ancient records were just simple pictorial instructions for preparing food.
The truth of the matter is, the most ancient recipe discovered, according to food historians are some tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful. Progressing into The time of the romans around 25BC a roman called Apicius wrote a number of scripts showing how to cook the recipes prepared by his fellow Romans. In his scrolls, he tells us how the roman meals were divided into appetizers, main meal and dessert, a very modern way of dining. He also informs us how the ancient chefs were skilled in the use of a good variety of aromatic flavors, including many that are still in use today such as basil, fennel and dill. During the following few centuries, the powerful and rich houses strove to serve the most exotic meals, and consequentially the best cooks and their recipes could command a high salary. Notwithstanding that, it was during the 19th century that fine cookery and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, trying out, and recording the recipes that were being prepared for the better households. By the advent of the 1900s, cook books were starting to become popular mostly due to better eduction, more leisure time and having more money to spend. Like it or not, the introduction of TV gave us celebrity TV chefs and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes such as those found on sites such as this. |
