The History of Recipes
It is quite possible to track the history of transcribed cooking instructions far back into ancient history, in truth as far back as early Egypt, and possibly even further. Interesting though that maybe, generally, these old cook books were just very simple hieroglyphic instructions for meal preparation.
The truth of the matter is, the most ancient recipe in existence, according to academics is a series of tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. Progressing into The time of the romans around 25BC a roman called Apicius created a collection of documents which described recipes cooked by the Romans. In his scrolls, he describes how the roman meals were split into hors d`oeuvres, main course and dessert, a style of dining still practiced today. He also tells us how the Roman cooks were skilled in the use of a wide range of herbs, including a few that are still present in modern kitchens for example bay, mint and asafoetida. During the following few centuries, the rich and powerful families of the West tried to offer the most extravagent meals, and as a consequence, chefs and their recipes were much in demand. Even so, it wasn`t until the nineteenth century that formal cookery and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, verifying, and recording the recipes of their peers. By the advent of the 1900s, cookery books are starting to become popular mostly as a result of more people being able to read, more spare time and having more disposable income. |
