The History of Recipes
It is quite possible to track the history of transcribed cooking instructions way back into history, certainly as far back into history as early Egypt, and maybe even further. Interesting though that maybe, mostly, these old cook books were just basic hieroglyphic instructions for meal preparation.
The truth of the matter is, the oldest recipe discovered so far, according to experts in ancient history are some clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Moving on, there were a couple of recipe books which appeared in the 1300s - a book titled `Forme of Cury`, and another titled `Curye on Inglish`. Although the titles sound familiar, these are nothing to do with the indian curry that is served today, but instead accounts of the types of meals prepared by the cooks of the rich people of those days. During the following few centuries, the rich and powerful families of Europe competed to serve the most exotic meals, and because of this chefs and their recipes increased in prestige. Even so, it wasn`t until the 1800s that fine cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, trying out, and publishing recipes of the day. By the advent of the 1900s, cookery publications are highly popular mostly as a result of higher levels of literacy, increased leisure time and a general increase in wealth. |
