The History of Recipes
Academics have proved the existence of recipes far back into distant history, in truth as far into history as the early Egyptians, and quite possibly further than that. However, generally, these old cookbooks were just very simple pictorial recipes for meal preparation.
Interestingly, the oldest recipe discovered, according to experts in ancient history is a collection of ancient tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. During Roman times around 25BC a man called Apicius created some scripts detailing recipes enjoyed by wealthy roman citizens. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and dessert, something we still use today. He also informs us how the Romans were skilled in the use of a good variety of aromatic flavours, including some that we all recognise like basil, fennel and parsley. As our culinary historical trip moves on a few more years we have a couple of recipe books which appeared in the fourteenth century : a book entitled `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, these books are nothing to do with the indian food that is familiar to us all today, but instead recipes for the types of meals on the menues of the rich and wealthy people of that period. In the fifteenth century, knights returning from the crusades brought back a variety of foods and herbs from the holy lands, including spices like coriander, parsley, basil and rosemary. The introduction of these new culinary ideas created a surge in recipe manuscripts, most of which are kept safe in private libraries. By the arrival of the 20th century, cooking publications were highly popular mostly as a result of better eduction, people having increased free time and a general increase in wealth. |
