The History of Recipes
We can read the history of meal recipes back into antiquity, certainly as far as the early Egyptians, and possibly even further than that. However, these, old cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe in existence, according to academics is a series of stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `wonderful`. Later on, in Roman times around 25BC a man called Apicius compiled a collection of scripts detailing recipes prepared by the Romans. In his works, he recounts how the meals of wealthy Romans were split into appetizers, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the cooks of his times made use of a good variety of spices, including a few that will be familiar to modern chefs like basil, fennel and asafoetida. Later on, there are a couple of cookery books from the 14th Century ; a cookery book called `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, these two books are unconnected to the curry that is served today, but instead descriptions of the types of food enjoyed by the rich people of that time. Later on in the 1400s, the Crusaders brought back a variety of foods, spices and herbs from Arab cooking, such as rosemary and coriander. The introduction of these new foods and spices created a torrent in manuscripts on cooking, the majority of which are kept safe in academic collections. The introduction of the TV brought us TV cooks and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everyone to search through massive numbers of recipes such as those found on this web site. |
