The History of Recipes
It is quite possible to follow the history of recipes back into distant history, in truth as far back as ancient Egypt, and quite possibly further than that. Interesting though that is, sadly, these ancient cook books were just simple hieroglyphic recipes for food preparation.
In fact, the most ancient recipe discovered so far, according to experts are a few clay tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. Progressing into The time of the roman empire 25BC a man called Apicius compiled some documents which described recipes cooked by his fellow Romans. In his scrolls, he describes how the meals were separated into starters, main meal and desserts, something we still use today. This early Roman chef informs us how the ancient chefs used a good variety of aromatic flavors, including a few that are still present in modern kitchens like bay, rue and dill. For the centuries that followed, the wealthy families of Europe tried to offer the most exotic meals, and because of this the best cooks and their recipes became highly prized. However, it was during the 19th century that cookery and recipe books became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collecting, trying out, and recording recipes that were common in the better off homes of the day. By the time we get to the 20th century, recipe books were starting to become popular mostly due to higher levels of literacy, people having increased free time and disposable income. |
