The History of Recipes
Recipes as a concept can be found far back into distant history, in fact as far back into history as the early Egyptians, and possibly even further. In practice though, mostly, these ancient cook books were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the most ancient recipe in existence, according to historians is a collection of ancient tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Progressing into Roman times 25BC a roman called Apicius created some scripts showing how to cook the recipes enjoyed by wealthy Romans. He describes how the meals were divided into hors d`oeuvres, main course and dessert, a style of dining still practiced today. Aspicius recounts how the Roman cooks were skilled in the use of many different spices and herbs, including a few that are still present in modern kitchens like basil, rue and asafoetida. Continuing our culinary historical journey, we find a couple of books from the 1300s ; one book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are a little misleading though, these books are not about the indian food that is popular today, but rather recipes for the types of meals prepared for the nobility of the time. Later on, in the 15th century, people returning from the crusades brought back a variety of foods, spices and herbs from Arab countries, such as parsley and basil. The introduction of these new tastes created an increase in recipe publications, many of which still exist in private collections. The TV revolution gave us TV chefs and the spin-off recipe books. And that brings us to the present day and the internet revolution, permitting us all to access massive numbers of recipes like those on this recipe site. |
