The History of Recipes
We can read the history of meal recipes way back into the distant past, in truth as far back as the Egypt of the Pharoahs, and possibly even further than that. Having said that, these, old recipes were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
In fact, the most ancient recipe discovered, according to historians is a series of ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Much later, in Roman times a roman called Apicius created a few documents describing recipes cooked by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, a very modern way of dining. He also tells us how the cooks of his times used a wide range of spices, including many that are still in use today for example thyme, mint and asafoetida. Continuing our culinary historical journey, there were a couple of interesting recipe books dating from the 1300s : a recipe book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Don`t be fooled by the titles though, these have no connection with the curry that we all know today, but instead descriptions of the types of food on the menus of the rich people of the time. Later on, in the 15th century, people returning from the crusades brought us many foods, spices and herbs from Arab cuisine, including spices such as coriander, parsley, basil and rosemary. The introduction of these new foods and spices caused an explosion in manuscripts on cooking, most of which are now in academic collections. Over the succeeding few hundred years, the upper classes competed with each other to lay on the best banquets, and because of this chefs and their collection of recipes became highly prized. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to assembling, testing, and recording recipes common in their social group. When we get to the twentieth century, cookery books are in high demand, due to higher levels of literacy, leisure time and disposable income. |
