The History of Recipes
We are able to read the history of `recipes` way back into the distant past, certainly as far back as ancient Egypt, and maybe further still. Interesting though that maybe, sadly, these early cookbooks were just very simple hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the oldest recipe found, according to food historians is a collection of clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. As we move into The time of the romans around 25BC a man called Apicius assembled a number of documents describing recipes cooked by wealthy Romans. In his works, Apicius recounts how the roman meals were separated into hors d`oeuvres, entrees and dessert, something we still use today. Aspicius informs us how the ancient cooks used many aromatic flavors, including some familiar names for example bay, mint and asafoetida. During the next few centuries, the powerful families of Wesstern Europe competed with each other to serve the most exotic meals, and as a result the best cooks and their recipe collections were at a premium. Even so, it wasn`t until the 1800s that haute cuisine and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, trying out, and writing down the recipes of their peers. By the advent of the 20th century, recipe books are in high demand, mostly as a result of increased literacy, more leisure time and having more money to spend. The revolution that is television brought us cooking programs and the recipe books that accompanied them. And that brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes like the ones you can find on sites such as this. |
