The History of Recipes
Recipes as an idea can be found far back into the far past, in truth as far back into recorded history as ancient Egypt, and quite possibly further than that. Interesting though that is, sadly, these old records were just very simple pictorial instructions for food preparation.
In an interesting twist, the most ancient recipe discovered, according to academics is a series of ancient tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Later on, in The time of the romans 25BC a roman called Apicius created a number of documents which described recipes prepared by the Romans. He recounts how the meals of wealthy Romans were separated into starters, main course and desserts, a very modern way of dining. He also describes how the ancient cooks made use of many different aromatic flavours, including a few that are still present in modern kitchens such as bay, fennel and parsley. Moving our culinary historical trip onwards, we find two interesting cookery books which appeared in the fourteenth century ; a cookery book called `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are somewhat misleading tho`, they are not about the spicy food that we all know today, but instead recipes for the types of meals on the tables of the rich and powerful of the period. Later on, in the 15th century, people returning from the crusades brought us many new foods and herbs from the holy lands, including spices like rosemary and coriander. These new foods and tastes was responsible for an increase in books on cooking, the majority of which are now in private collections. When we get to the 20th century, cookbooks were increasing in popularity mostly as a result of better eduction, people having increased free time and having more disposable income. |
