The History of Recipes
Transcribed cooking instructions as a concept can be observed back into distant history, in truth as far back into recorded history as early Egypt, and maybe further still. In practice though, sadly, these early cook books were just very simple pictorial instructions for preparing meals.
In an interesting twist, the most ancient recipe discovered so far, according to food historians is a collection of clay tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. Much later, in Roman times a man called Apicius compiled some documents which described recipes prepared by his fellow Romans. He tells us how the meals of wealthy Romans were divided into hors d`oeuvres, main meal and afters, something that is very familiar to us today. Additionally, he tells us how the chefs of Roman times were skilled in the use of a good variety of aromatic flavours, including a few you will know such as basil, fennel and parsley. Continuing our culinary historical journey, we have a couple of interesting cookery books which appeared in the 14th Century ; a cookery book entitled `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these books are unconnected to the curry that appears on menues today, but rather descriptions of the types of meals served to the nobility of that time. Later on, in the 15th century, knights returning from the crusades brought us many new foods and herbs from middle-east cuisine, including basil and coriander. These new culinary innovations caused an eruption in manuscripts on food, some of which are now in private collections. The TV revolution brought us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to access massive numbers of recipes such as those found on our site. |
