The History of Recipes
Written recipes as an idea can be traced far back into the distant past, at least as far back as early Egypt, and quite possibly further than that. In practice though, mostly, these early cook books were just basic pictorial recipes for meal preparation.
In an interesting twist, the oldest recipe discovered, according to experts are some ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Later on, in The time of the romans 25BC a roman called Apicius created a collection of scripts detailing recipes enjoyed by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, entrees and desserts, something we still use today. Additionally, he informs us how the ancient chefs made use of a wide range of aromatic flavors, including some that we all recognise like thyme, fennel and asafoetida. Over the succeeding few centuries, the upper classes competed to serve up the most extravagent meals, and consequentially the best cooks and their collection of recipes became highly prized. Notwithstanding that, it wasn`t until the 1800s that cookery and recipe books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, trying out, and recording recipes to allow everyone to enjoy them. The TV revolution gave us TV cooks and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to search through massive numbers of recipes just like those on sites such as this. |
