The History of Recipes
Historians have traced the existance of recipes back into distant history, at least as far into history as pharonic Egypt, and possibly even further than that. However, in the main part, these early recipes were just very basic pictorial instructions for preparing meals.
Fascinatingly, the oldest recipe discovered so far, according to academics is a collection of clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. During Roman times around 25BC a man called Apicius compiled some documents detailing recipes cooked by his fellow Romans. He describes how the meals of wealthy Romans were separated into hors d`oeuvres, main course and desserts, something that is very familiar to us today. He also informs us how the early Romans were skilled in the use of many different herbs and spices, including a few that will be familiar to modern chefs like thyme, rue and asafoetida. In the 15th century, people returning from the crusades brought us a variety of foods and spices from the East, including spices such as coriander, parsley, and basil. These new herbs and spices prompted a torrent in recipe manuscripts, many of which are now in private cookery archives. The arrival of TV brings us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes like those on this recipe site. |
