The History of Recipes
We can read the history of `recipes` way back into history, at least as far back into recorded history as the Egyptians, and maybe further still. Interesting though that is, mostly, these old records were just primitive hieroglyphic or cunieform recipes for meal preparation.
In fact, the oldest recipe discovered so far, according to experts are a few stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Later on, in Roman times around 25BC a roman called Apicius compiled a few documents describing recipes prepared by his fellow Romans. In his works, he recounts how the meals were separated into appetizers, entrees and desserts, a style of dining still practiced today. Additionally, he informs us how the early Romans were skilled in the use of a good variety of aromatic flavors, including many that are still in use today for example basil, rue and parsley. For the next few years, the rich and powerful families of Europe competed with each other to serve up the best banquets, and because of this the best cooks and their recipes became highly prized. However, it was during the 1800s that fine cooking and recipe collections really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collecting, trying out, and recording recipes of the day. By the advent of the twentieth century, cookery publications are in great demand, due to higher levels of literacy, people having more spare time and disposable income. |
