The History of Recipes
Food historians have traced the existence of recipes far back into antiquity, in fact as far as early Egypt, and possibly even further. Interesting though that is, mostly, these old records were just simple pictorial recipes for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to experts is a collection of tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. As we move into The time of the roman empire 25BC a roman called Apicius wrote some documents showing how to cook the recipes prepared by wealthy Romans. In his works, he recounts how the meals were separated into hors d`oeuvre, entrees and afters, something that is very familiar to us today. He also tells us how the ancient cooks were skilled in the use of many different spices, including a few you will know like bay, mint and dill. In the fifteenth century, people returning from the crusades brought back many new foods and herbs from middle-east cuisine, including spices such as coriander, basil and rosemary. These new foods and tastes prompted a surge in manuscripts on cooking, some of which still exist in academic collections. Over the following few hundred years, the powerful and wealthy houses strove to lay on the most extravagent meals, and because of this chefs and their recipes became highly prized. Notwithstanding that, it was during the 19th century that formal cookery and recipe books really came of age. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, verifying, and writing down recipes that were common in the better off homes of the day. The revolution that is television gave us TV chefs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, allowing everybody to search through massive numbers of recipes just like those on our web site. |
