The History of Recipes
Transcribed cooking instructions as an idea can be found back into distant history, certainly as far back into recorded history as early Egypt, and potentially, even further back. In practice though, sadly, these ancient records were just primitive hieroglyphic instructions for preparing meals.
In an interesting twist, the oldest recipe in existence, according to Professor Solomon Katz, is a series of stone tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Much later, in Roman times a man called Apicius compiled some documents detailing recipes enjoyed by wealthy Romans. He tells us how the meals of wealthy Romans were divided into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the cooks of Roman times made use of a wide range of spices and herbs, including many that are still in use today like bay, fennel and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us a variety of foods and herbs from Arab cooking, including spices like parsley and basil. These new culinary innovations prompted a torrent in publications on food, the majority of which are kept safe in private libraries. The TV revolution brought us TV cooks and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes just like those on this recipe site. |
