The History of Recipes
It is quite possible to prove the history of written cooking instructions back into the far past, in truth as far into history as the early Egyptians, and possibly even further than that. Interesting though that maybe, these, ancient cook books were just very basic pictorial instructions for preparing food.
In fact, the most ancient recipe discovered, according to experts is a series of tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. Progressing into Roman times around 25BC a man called Apicius created a number of documents which described recipes cooked by wealthy Romans. In his publication, Apicius recounts how the meals were divided into hors d`oeuvres, entrees and afters, a style of dining still practiced today. He also describes how the early Romans were skilled in the use of a good variety of herbs, including some familiar names such as basil, mint and parsley. For the centuries that followed, the rich families of Wesstern Europe tried to serve up the best banquets, and consequentially cooks and their recipe collections became highly prized. Even so, it wasn`t until the 1800s that formal cookery and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, verifying, and writing down recipes for their fellow cooks to enjoy. By the advent of the twentieth century, cooking publications are starting to become popular due to better eduction, people having more free time and disposable income. |
