The History of Recipes
We are able to track the history of meal recipes way back into distant history, in fact as far back into recorded history as the early Egyptians, and potentially, even further back. Having said that, in the main part, these early cookbooks were just primitive hieroglyphic instructions for preparing meals.
Later on, in The time of the roman empire around 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were divided into hors d`oeuvres, main meal and afters, something that is very familiar to us today. Aspicius also tells us how the Roman chefs were skilled in the use of a good variety of herbs, including some familiar names such as thyme, rue and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back a variety of foods, spices and herbs from the East, including spices like parsley, basil and rosemary. These new foods and spices created an explosion in manuscripts on cooking, some of which are kept safe in private cookery archives. By the time we get to the 1900s, cookery publications were greatly in demand due to increased literacy, people having increased leisure time and having more disposable income. |
