The History of Recipes
We are able to trace the history of `recipes` back into the distant past, in fact as far back into recorded history as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that is, these, ancient cook books were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe found, according to experts is a series of tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. As we move into Roman times 25BC a man called Apicius assembled a number of documents showing how to cook the recipes prepared by the Romans. In his works, he describes how the roman meals were separated into starters, main meal and dessert, a style of dining still practiced today. Additionally, he informs us how the ancient chefs were skilled in the use of many herbs and spices, including a few that will be familiar to modern cooks for example thyme, rue and parsley. During the next few centuries, the powerful families of Wesstern Europe strove to lay on the most extravagent banquests, and as a result the best chefs and their recipe collections became highly prized. However, it was during the 19th century that haute cuisine and recipe collections became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, verifying, and publishing recipes common in their social group. By the advent of the 20th century, recipe books are starting to become popular as a result of increased literacy, people having increased spare time and disposable income. |
