The History of Recipes
Recipes as a concept can be observed far back into antiquity, at least as far into history as the early Egyptians, and possibly even further. Having said that, sadly, these old recipes were just very simple pictorial instructions for meal preparation.
Fascinatingly, the oldest recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. As our culinary historical trip moves to more modern times we find two recipe books dating from the 1300s ; a recipe book called `Forme of Cury`, and another called `Curye on Inglish`. Amusingly, they are not about the curry that is served today, but rather recipes for the types of food prepared for the rich and powerful. In the 15th century, people returning from the crusades brought back many spices and herbs from Arab cuisine, including spices such as parsley and basil. These new spices and herbs was responsible for an increase in manuscripts on cooking, the majority of which still exist in private libraries. Over the following few centuries, the powerful and wealthy houses competed to offer the most exotic banquets, and because of this chefs and their recipe collections were highly sought after. Even so, it was during the nineteenth century that cooking and cookery books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to assembling, trying out, and writing down recipes common in their social group. The arrival of TV gave us TV cookery programs and the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes like those on our site. |
