The History of Recipes

It is actually possible to track the history of recipes back into the far past, in fact as far into history as the Egyptians, and maybe further still. Interesting though that is, sadly, these ancient cook books were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.

The truth of the matter is, the most ancient recipe in existence, according to historians is a collection of clay tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated.

As we move into Roman times 25BC a man called Apicius created a number of documents showing how to cook the recipes cooked by wealthy Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. Aspicius also recounts how the ancient chefs were skilled in the use of many different spices and herbs, including some that we all recognise such as bay, rue and dill.

Later, in the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab countries, including basil and coriander. These new foods and tastes caused an explosion in publications on food, some of which still exist in academic collections.

During the following few centuries, the rich families of Wesstern Europe strove to serve up the best banquets, and as a consequence, the best cooks and their recipe collections were greatly in demand. However, it wasn`t until the 19th century that fine cookery and recipe publications really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, testing, and writing down the recipes that were being prepared for the better households.

The revolution that is television brings us TV chefs and the spin-off recipe books.

Which brings us neatly to the present day and the internet revolution, permitting us all to access massive numbers of recipes like those on this site.
