The History of Recipes
We can follow the history of `recipes` back into the distant past, certainly as far back as ancient Egypt, and quite possibly further than that. Interesting though that is, mostly, these early records were just very basic pictorial recipes for meal preparation.
In fact, the oldest recipe discovered, according to academics is a series of clay tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. Progressing into The time of the roman empire 25BC a man called Apicius assembled some documents describing recipes cooked by wealthy roman citizens. In his works, he describes how the meals were separated into starters, main course and afters, a style of dining still practiced today. Aspicius informs us how the ancient cooks made use of many different herbs, including a few you will know for example bay, rue and parsley. Later on, there are a couple of interesting recipe books which appeared in the fourteenth century : a cookery book called `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, they are not about the spicy food that is popular today, but rather accounts of the types of food cooked for the rich and powerful of those days. Later on in the 1400s, the Crusaders brought back many foods and herbs from the holy land, including spices like coriander, parsley, basil and rosemary. These new foods and tastes was responsible for a torrent in cookery books, many of which still exist in private cookery archives. For the centuries that followed, the powerful families of Europe competed with each other to lay on the most exotic meals, and consequentially the best chefs and their collection of recipes were much in demand. However, it was during the nineteenth century the formal cooking and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to collating, verifying, and writing down recipes of the day. By the time we get to the 20th century, recipe publications were in high demand, mostly as a result of better eduction, people having increased free time and having more disposable income. The introduction of the TV brought us cooking programs and the recipe books that accompanied them. And that brings us to the present day and the invention of the internet, allowing us all to search through massive numbers of recipes like those on the site you are now reading. |
