The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions way back into the far past, certainly as far as pharonic Egypt, and quite possibly further than that. Having said that, in the main part, these old records were just simple hieroglyphic or cunieform instructions for food preparation.
Interestingly, the oldest recipe discovered, according to food historians are a few clay tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. Progressing into The time of the romans around 25BC a roman called Apicius created a collection of documents detailing recipes enjoyed by wealthy Romans. In his works, he describes how the roman meals were separated into appetizers, main course and dessert, a style of dining still practiced today. He also tells us how the Roman cooks used a wide range of herbs, including a few that are still present in modern kitchens like basil, mint and dill. Moving on, there were a couple of recipe books which date from the 14th Century ; a cookery book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these two books are not about the indian food that is popular today, but instead accounts of the types of meals on the menus of the upper classes. Later, in the 15th century, people returning from the crusades brought us a variety of spices and herbs from the holy lands, such as rosemary and coriander. The introduction of these new culinary ideas created an increase in recipe publications, many of which are now in private libraries. During the next few hundred years, the rich and powerful families of the West competed to serve the most exotic meals, and consequentially cooks and their recipe collections were at a premium. However, it was during the nineteenth century that haute cuisine and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, verifying, and recording recipes to allow everyone to enjoy them. By the time we get to the twentieth century, cookery books are highly popular mostly due to better eduction, people having more free time and having more money to spend. Like it or not, the introduction of TV gave us TV cooks and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes just like those on the site you are now reading. |
