The History of Recipes
We are able to trace the history of written recipes way back into distant history, in truth as far back into history as pharonic Egypt, and maybe further still. Having said that, mostly, these ancient cookbooks were just primitive hieroglyphic recipes for meal preparation.
As we move into Roman times 25BC a roman called Apicius compiled a collection of documents which described recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the cooks of Roman times used a wide range of spices and herbs, including a few you will know for example bay, rue and parsley. Later, in the fifteenth century, knights returning from the crusades brought back many new foods and spices from the holy lands, including parsley and basil. The introduction of these new foods and spices created an increase in books on cookery, the majority of which are kept safe in private collections. By the advent of the 20th century, cookery publications were increasing in popularity as a result of better eduction, people having more leisure time and being a little richer. |
