The History of Recipes
Academics have proved the existence of recipes far back into history, in truth as far as the Egyptians, and possibly even further. However, these, early records were just simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the oldest recipe in existence, according to food historians is a series of clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. As our culinary historical trip moves to more modern times there were a couple of interesting books dating from the 14th Century - a cookery book called `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, these books are not about the spicy food that we all know today, but rather descriptions of the types of food prepared by the cooks of the nobility of that time. In the 15th century, knights returning from the crusades brought back many spices and herbs from Arab countries, including coriander, parsley, and basil. The introduction of these new tastes created an increase in manuscripts on cookery, the majority of which still exist in academic collections. Over the next few centuries, the rich and powerful families of Europe competed with each other to serve up the most exotic banquets, and as a consequence, the best cooks and their recipes could command a high salary. However, it wasn`t until the nineteenth century the formal cooking and cookery books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to assembling, verifying, and writing down recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cookery publications are in great demand, mostly due to more people being able to read, people having more leisure time and having more money to spend. The introduction of television brings us TV cookery programs and the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everybody to search through thousands of recipes just like those on the site you are now reading. |
