The History of Recipes
It is possible to read the history of written recipes far back into distant history, at least as far into history as the Egypt of the Pharoahs, and potentially, even further back. However, sadly, these old cook books were just very basic hieroglyphic or cunieform recipes for food preparation.
In fact, the oldest recipe discovered, according to academics are a few ancient tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. Later, we find some recipe books published in the fourteenth century : a cookery book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these books have no connection with the indian food that is familiar to us all today, but instead descriptions of the types of food prepared by the chefs of the nobility of that period. Later, in the fifteenth century, people returning from the crusades brought back many foods and spices from the holy land, including spices like coriander, parsley, basil and rosemary. These new herbs and spices caused an explosion in recipe manuscripts, most of which are kept safe in academic collections. For the decades that followed, the powerful and wealthy competed to offer the most extravagent banquests, and consequentially the best chefs and their collection of recipes were much in demand. Nevertheless, it wasn`t until the 19th century that fine cookery and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, testing, and publishing recipes to help cooks of their time. By the time we get to the 1900s, cook books were in great demand, as a result of better eduction, people having increased leisure time and having more disposable income. The arrival of television gave us TV cookery programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through thousands of recipes such as those found on this site. |
