The History of Recipes
It is quite possible to follow the history of recipes way back into distant history, certainly as far back into history as pharonic Egypt, and quite possibly further than that. In practice though, these, early recipes were just very basic hieroglyphic instructions for preparing food.
In fact, the oldest recipe found, according to academics are some tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Progressing into The time of the roman empire 25BC a roman called Apicius assembled a number of documents detailing recipes enjoyed by his fellow Romans. In his publication, he tells us how the meals of wealthy Romans were split into appetizers, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the ancient cooks made use of a wide range of herbs, including a few that will be familiar to modern chefs like thyme, mint and asafoetida. Later on, there were two recipe books which were published in the fourteenth century - a cookery book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these two books are unconnected to the spicy food that is served today, but instead accounts of the types of food on the menues of the rich and powerful of the time. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and spices from the East, including coriander, parsley, and basil. The introduction of these new tastes led to a torrent in manuscripts on cookery, some of which are now in private cookery archives. By the time we get to the 20th century, cookery publications were highly popular as a result of increased literacy, more leisure time and having more disposable income. The introduction of the TV brings us TV cooks and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing us all to search through massive numbers of recipes just like those on the site you are now reading. |
