The History of Recipes
Food historians have traced the existence of recipes way back into ancient history, certainly as far into history as the early Egyptians, and maybe further still. In practice though, in the main part, these early cook books were just very simple hieroglyphic or cunieform instructions for preparing meals.
As we move into The time of the roman empire 25BC a man called Apicius compiled some scripts describing recipes cooked by the Romans. He describes how the meals of wealthy Romans were split into hors d`oeuvre, main meal and desserts, something we still use today. Aspicius also informs us how the cooks of Roman times were skilled in the use of a wide range of aromatic flavors, including a few that will be familiar to modern chefs like bay, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought us many foods, spices and herbs from the Middle-East, including coriander, basil and rosemary. The introduction of these new tastes prompted an explosion in recipe books, most of which are kept safe in private collections. The introduction of television brought us cooking programs and the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes just like those on sites such as this. |
