Ingredients
1 tbsp enriched corn meal - (aunt jemima o, r quaker)
1/2 cup enriched corn meal - (aunt jemima o, r quaker)
1 1/2 cup all-purpose flour
1 tbsp baking powder
1/2 tsp salt (optional)
3/4 cup milk
1/4 cup vegetable oil
12 oz taco sauce
15 1/2 oz mexican style chili beans - (van ca, mp's), undrained
1 medium green or red bell pepper - cut into, thin rings
8 oz monterey jack cheese - shredded
Directions
Heat oven to 450 F. Grease 14-inch round pizza pan or 15x10-inch
jelly roll pan. Sprinkle 1 tablespoon corn meal evenly into prepared
pan. Combine remaining 1/2 cup corn meal, flour, baking powder and
salt. Add milk and oil; stir with fork until mixture forms a ball.
Press dough into prepared pan; shape edge to form rim. Bake 15
minutes.
Spread taco sauce evenly over partially baked crust. Top with beans,
pepper rings and cheese; continue baking 10 minutes or until cheese
is melted.

The History of Recipes
Transcribed cooking instructions as a concept can be traced way back into the distant past, at least as far back as pharonic Egypt, and possibly even further than that. However, mostly, these ancient recipes were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
During the time of the Romans a man called Apicius assembled a few documents detailing recipes enjoyed by his fellow Romans. In his scrolls, Apicius describes how the roman meals were split into starters, main meal and dessert, a very modern way of dining. Aspicius also describes how the cooks of his times used a good variety of aromatic flavours, including a few that are still present in modern kitchens for example basil, mint and parsley. Over the next few hundred years, the powerful families of the West competed to serve up the most extravagent meals, and consequentially cooks and their recipes became highly prized. Even so, it was during the 19th century that formal cookery and cookery books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collecting, trying out, and recording the recipes of their peers. The arrival of TV brought us TV cooks and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to search through thousands of recipes such as those found on our site. |
