The History of Recipes
Written cooking instructions as an idea can be observed far back into the distant past, in fact as far as the Egypt of the Pharoahs, and potentially, even further back. However, generally, these old records were just very basic hieroglyphic instructions for preparing meals.
In an interesting twist, the most ancient recipe discovered, according to food historians is a series of ancient tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful and blissful. Progressing into Roman times 25BC a roman called Apicius created a collection of scripts showing how to cook the recipes prepared by the Romans. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. Aspicius also describes how the Roman cooks made use of many herbs, including a few that will be familiar to modern cooks like bay, fennel and dill. Continuing our culinary historical journey, there were a couple of books published in the fourteenth century ; a book called `Forme of Cury`, and another entitled `Curye on Inglish`. Perhaps surprisingly, these books are nothing to do with the curry that is popular today, but rather accounts of the types of meals on the tables of the rich and powerful of that period. Later on, in the 15th century, people returning from the crusades brought us many new foods and spices from the holy land, including spices like parsley and basil. These new foods and spices created a surge in publications on food, many of which still exist in private libraries. When we get to the twentieth century, cookery books are starting to become popular as a result of better eduction, people having increased leisure time and having more money to spend. |
