The History of Recipes
It is actually possible to trace the history of written cooking instructions way back into the far past, at least as far as the early Egyptians, and potentially, even further back. Interesting though that is, in the main part, these ancient recipes were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the oldest recipe found, according to experts is a series of clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. Progressing into The time of the romans around 25BC a man called Apicius compiled a number of scripts showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvre, main meal and afters, something we still use today. Additionally, he describes how the cooks of his times were skilled in the use of many different spices and herbs, including a few you will know such as thyme, fennel and parsley. During the next few hundred years, the wealthy families of Wesstern Europe strove to serve the most exotic meals, and because of this the best cooks and their recipes were much in demand. However, it wasn`t until the 19th century that cooking and recipe books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collating, testing, and publishing the recipes that were being prepared for the better households. By the time we get to the twentieth century, recipe publications are greatly in demand mostly as a result of higher levels of literacy, more leisure time and having more disposable income. Like it or not, the introduction of TV brought us TV chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, allowing everyone to access massive numbers of recipes like those on this site. |
