The History of Recipes
It is quite possible to prove the history of written cooking instructions way back into history, in truth as far back into recorded history as the Egypt of the Pharoahs, and maybe further still. Interesting though that is, mostly, these ancient recipes were just primitive hieroglyphic or cunieform recipes for meal preparation.
Progressing into Roman times around 25BC a roman called Apicius compiled a few documents which described recipes prepared by his fellow Romans. In his works, he recounts how the meals were separated into appetizers, main course and desserts, a style of dining still practiced today. Additionally, he recounts how the Roman chefs used many herbs, including a few you will know like bay, fennel and parsley. Later on in the 1400s, people returning from the crusades brought us many new foods and spices from middle-east cuisine, including coriander, basil and rosemary. These new foods and tastes led to a torrent in books on cooking, many of which are kept safe in academic collections. By the advent of the twentieth century, cookery publications are increasing in popularity as a result of higher levels of literacy, people having more leisure time and disposable income. |
