The History of Recipes
We are able to follow the history of meal recipes far back into distant history, in fact as far back into recorded history as ancient Egypt, and possibly even further. In practice though, mostly, these old records were just primitive hieroglyphic or cunieform recipes for preparing meals.
Later on, in The time of the roman empire around 25BC a roman called Apicius created some scripts showing how to cook the recipes prepared by his fellow Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, a very modern way of dining. This early Roman chef recounts how the ancient chefs used a wide range of herbs and spices, including some that we all recognise like thyme, fennel and dill. Later, in the fifteenth century, people returning from the crusades brought back many new spices and herbs from the Middle-East, such as coriander, parsley, basil and rosemary. The introduction of these new tastes caused an increase in recipe publications, the majority of which are kept safe in academic collections. By the time we get to the 1900s, cookbooks are starting to become popular mostly due to increased literacy, more free time and a general increase in wealth. |
