The History of Recipes

Recipes as an idea can be traced way back into distant history, at least as far into history as early Egypt, and maybe further still. In practice though, mostly, these ancient recipes were just basic hieroglyphic recipes for meal preparation.

In an interesting twist, the oldest recipe found, according to experts are some clay tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful.

During the time of the Romans a roman called Apicius assembled a few documents detailing recipes cooked by the Romans. He describes how the meals were divided into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. He also informs us how the cooks of his times made use of a wide range of spices and herbs, including a few that are still present in modern kitchens such as thyme, mint and dill.

Later on, in the 15th century, knights returning from the crusades brought back many foods and herbs from the Middle-East, including rosemary and coriander. The introduction of these new tastes created an outbreak in publications on food, many of which are now in private collections.

Over the next few hundred years, the upper-class families of Wesstern Europe competed to offer the most extravagent meals, and as a result the best cooks and their recipe collections became highly prized. Notwithstanding that, it wasn`t until the 1800s that fine cookery and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to assembling, testing, and recording the recipes that were being prepared for the better households.

When we get to the 20th century, cookery publications were in great demand, mostly as a result of increased literacy, people having more leisure time and disposable income.
