The History of Recipes
Experts have traced the existence of recipes back into the distant past, at least as far back as early Egypt, and maybe even further. Interesting though that maybe, in the main part, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the oldest recipe discovered so far, according to experts in ancient history is a collection of clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. During the time of the Roman Empire a man called Apicius assembled some documents detailing recipes cooked by wealthy Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvre, main course and afters, a style of dining still practiced today. He also tells us how the ancient cooks were skilled in the use of many different spices, including some familiar names such as thyme, mint and asafoetida. Over the following few hundred years, the powerful families of Europe competed to serve up the most extravagent meals, and because of this chefs and their collection of recipes increased in prestige. Even so, it wasn`t until the nineteenth century that formal cookery and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collating, testing, and writing down the recipes that were being prepared for the better households. By the arrival of the 20th century, recipe publications were in great demand, mostly as a result of higher levels of literacy, increased leisure time and a general increase in wealth. The introduction of television brought us TV cookery programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes like those on this recipe site. |
