Ingredients

1 cucumbers
1 garlic cloves
1 peppers
1 dill
1 alum
1 13 cups water
1 1 cup apple cider vinegar
1/2 cup salt (non-iodized)
Directions
Pack hot sterilized jars with cucumbers, 1 clove garl, 1 pepper, dill
and 1/8 teaspoon alum. Bring water, vinegar and salt to boil and
pour over cucumbers, filling jar. quickly seal. Do not open for 6
weeks.

The History of Recipes
Written cooking instructions as a concept can be observed far back into ancient history, in truth as far back into recorded history as pharonic Egypt, and quite possibly further than that. However, generally, these old cook books were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the most ancient recipe in existence, according to academics is a collection of stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. As we move into The time of the roman empire around 25BC a roman called Apicius compiled some scripts which described recipes prepared by the Romans. In his publication, he recounts how the meals were divided into hors d`oeuvres, main meal and afters, a very modern way of dining. Aspicius tells us how the cooks of Roman times were skilled in the use of a wide range of herbs and spices, including a few you will know like thyme, mint and asafoetida. In the 15th century, people returning from the crusades brought us many new foods and spices from Arab cooking, including spices like coriander, parsley, and rosemary. These new foods and spices created an eruption in manuscripts on cookery, most of which still exist in private cookery archives. When we get to the 1900s, cookery books were increasing in popularity as a result of more people being able to read, people having increased free time and having more disposable income. The arrival of TV gave us celebrity chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes just like those on our web site. |
