The History of Recipes
We are able to read the history of meal recipes back into the distant past, in truth as far back into recorded history as the ancient Egyptians, and potentially, even further back. However, these, old cook books were just primitive hieroglyphic instructions for preparing meals.
In an interesting twist, the oldest recipe discovered so far, according to experts are some stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Progressing into Roman times 25BC a roman called Apicius assembled a few documents describing recipes cooked by his fellow Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvres, entrees and desserts, a style of dining still practiced today. This early Roman chef informs us how the cooks of Roman times were skilled in the use of many different herbs and spices, including a few that will be familiar to modern cooks for example thyme, mint and asafoetida. Continuing our culinary historical journey, there were a couple of interesting recipe books published in the 1300s - a recipe book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Although the titles sound familiar, these books have no connection with the indian curry that is popular today, but rather recipes for the types of meals on the tables of the rich and wealthy people of those days. Later on, in the 15th century, knights returning from the crusades brought back many foods and spices from middle-east cuisine, such as coriander, parsley, and rosemary. These new spices and herbs caused an outbreak in books on cooking, many of which are now in private libraries. Over the succeeding few centuries, the upper-class families of Wesstern Europe competed with each other to lay on the most extravagent banquests, and because of this cooks and their recipes became highly prized. Even so, it wasn`t until the 1800s that fine cooking and recipe collections became really popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collating, verifying, and publishing recipes of the day. When we get to the 20th century, cookery publications were in high demand, as a result of higher levels of literacy, more free time and disposable income. The TV revolution brings us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes like those on our web site. |
