The History of Recipes
Written recipes as an idea can be tracked far back into the distant past, certainly as far as the ancient Egyptians, and maybe further still. Having said that, in the main part, these old cookbooks were just very simple hieroglyphic or cunieform recipes for meal preparation.
Much later, in Roman times a roman called Apicius assembled a collection of documents detailing recipes cooked by the Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvres, main course and desserts, a style of dining still practiced today. This early Roman chef describes how the chefs of Roman times made use of many different spices and herbs, including a few that are still present in modern kitchens like basil, rue and dill. Over the succeeding few hundred years, the upper-class families of Europe competed to offer the most exotic meals, and as a result cooks and their recipe collections were much in demand. Even so, it wasn`t until the nineteenth century that cookery and recipe collections became really popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, testing, and recording recipes to allow everyone to enjoy them. The TV revolution brings us TV cookery programs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes like those on this site. |
We hope you enjoy this Neri Shiro Miso (White Miso Dressing) recipe.
