The History of Recipes
Recipes as an idea can be tracked way back into ancient history, at least as far into history as the Egyptians, and potentially, even further back. However, mostly, these ancient records were just simple hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to experts is a collection of tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. Later on, in The time of the romans 25BC a man called Apicius created a collection of scripts detailing recipes cooked by his fellow Romans. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvres, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the cooks of his times were skilled in the use of many different spices, including some that we all recognise such as basil, rue and asafoetida. Continuing our culinary historical journey, we have some recipe books from the fourteenth century ; a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. Amusingly, these books have no connection with the curry that is served today, but rather descriptions of the types of food on the tables of the rich and wealthy people of the time. Later on, in the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the holy land, including spices like basil and coriander. These new herbs and spices created an outbreak in manuscripts on food, the majority of which are now in private collections. When we get to the 20th century, cooking publications are in great demand, due to better eduction, people having increased leisure time and disposable income. The TV revolution brought us TV cookery programs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to access massive numbers of recipes like those on this web site. |
