The History of Recipes
Experts have traced the existence of recipes back into ancient history, at least as far back into recorded history as the Egyptians, and maybe further still. In practice though, sadly, these ancient records were just primitive hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the most ancient recipe found, according to food historians are some tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. During Roman times 25BC a Roman scholar, called Apicius, assembled some scrolls showing how to cook the recipes prepared by the Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and afters, something we still use today. Additionally, he informs us how the Roman cooks were skilled in the use of many aromatic flavours, including a few that will be familiar to modern chefs like bay, rue and asafoetida. Closer to modern times, we have a couple of books from the 14th Century ; a cookery book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Despite their titles, these books are nothing to do with the curry that is familiar to us all today, but instead accounts of the types of meals served to the nobility of the period. Later, in the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from the East, including parsley and basil. The introduction of these new culinary ideas caused a surge in manuscripts on cooking, many of which are kept safe in private cookery archives. By the time we get to the twentieth century, recipe books were starting to become popular due to increased literacy, more leisure time and having more money to spend. |
