The History of Recipes
Transcribed cooking instructions as an idea can be observed back into antiquity, in truth as far into history as the early Egyptians, and possibly even further. In practice though, these, old records were just basic hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, are a few clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful. As we move into The time of the roman empire around 25BC a man called Apicius compiled a collection of scripts which described recipes cooked by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and dessert, a style of dining still practiced today. Aspicius describes how the cooks of Roman times were skilled in the use of a wide range of herbs, including a few that are still present in modern kitchens such as thyme, mint and parsley. In the 15th century, the Crusaders brought back many new foods, spices and herbs from middle-east cuisine, such as rosemary and coriander. The introduction of these new culinary ideas caused an explosion in manuscripts on food, many of which still exist in private libraries. When we get to the 1900s, cooking books were starting to become popular due to higher levels of literacy, more free time and being a little richer. The arrival of TV brought us celebrity TV chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes just like those on the site you are now reading. |
