The History of Recipes
Written recipes as an idea can be observed back into the far past, in truth as far back as early Egypt, and possibly even further than that. Interesting though that maybe, generally, these early records were just basic hieroglyphic instructions for preparing meals.
Much later, in Roman times a man called Apicius created a number of documents which described recipes cooked by wealthy roman citizens. In his works, Apicius recounts how the meals of wealthy Romans were separated into starters, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the Roman chefs were skilled in the use of a good variety of aromatic flavours, including a few that will be familiar to modern chefs for example basil, rue and parsley. Over the succeeding few hundred years, the rich families of Wesstern Europe tried to offer the most extravagent meals, and as a consequence, cooks and their recipe collections were highly sought after. However, it was during the nineteenth century the formal cooking and cookery books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collecting, trying out, and publishing the recipes of their peers. When we get to the twentieth century, cooking publications are starting to become popular mostly as a result of more people being able to read, people having more free time and being a little richer. |
