The History of Recipes
Transcribed cooking instructions as a concept can be tracked back into ancient history, certainly as far back into history as early Egypt, and quite possibly further than that. Interesting though that is, generally, these early cookbooks were just very simple pictorial instructions for preparing food.
In an interesting twist, the oldest recipe discovered so far, according to Professor Solomon Katz, are some ancient tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Later on, in The time of the romans 25BC a man called Apicius created some documents detailing recipes enjoyed by the Romans. In his publication, he tells us how the roman meals were separated into starters, main course and afters, something that is very familiar to us today. Aspicius informs us how the ancient Romans were skilled in the use of a wide range of aromatic flavours, including many that are still in use today such as thyme, rue and parsley. Over the succeeding few centuries, the rich families of the West competed to serve up the most extravagent meals, and because of this the best chefs and their recipes were highly sought after. However, it was during the nineteenth century the formal cooking and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, trying out, and recording the recipes that were being prepared for the better households. When we get to the 20th century, cooking publications were highly popular mostly as a result of higher levels of literacy, people having increased free time and being a little richer. |
