The History of Recipes
Written recipes as a concept can be traced far back into the far past, in truth as far back into recorded history as the early Egyptians, and maybe further still. Interesting though that is, these, old records were just very basic hieroglyphic instructions for food preparation.
Much later, in Roman times a roman called Apicius created some documents which described recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the Roman cooks used many herbs and spices, including many that are still in use today for example thyme, mint and dill. Over the succeeding few hundred years, the powerful and rich tried to serve the most exotic banquets, and because of this the best cooks and their recipe collections became highly prized. However, it was during the 1800s that cookery and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collecting, verifying, and recording the recipes of their peers. When we get to the twentieth century, cookbooks are increasing in popularity mostly due to higher levels of literacy, more leisure time and disposable income. |
