The History of Recipes
We can track the history of `recipes` far back into history, certainly as far into history as the ancient Egyptians, and maybe further still. Interesting though that is, generally, these ancient cookbooks were just very simple hieroglyphic or cunieform instructions for meal preparation.
Later on, in Roman times around 25BC a roman called Apicius wrote a few documents describing recipes cooked by the Romans. In his works, he recounts how the roman meals were split into starters, main meal and dessert, something we still use today. Aspicius also informs us how the ancient chefs made use of many aromatic flavors, including some that we all recognise for example thyme, rue and dill. For the next few years, the powerful and wealthy competed with each other to lay on the most exotic meals, and consequentially the best cooks and their collection of recipes were greatly in demand. However, it was during the 19th century that formal cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, trying out, and writing down recipes common in their social group. By the time we get to the twentieth century, cookbooks were greatly in demand mostly due to more people being able to read, people having more leisure time and a general increase in wealth. |
