The History of Recipes
Transcribed cooking instructions as a concept can be observed way back into antiquity, at least as far back into recorded history as the early Egyptians, and potentially, even further back. In practice though, sadly, these ancient cook books were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the oldest recipe found, according to Professor Solomon Katz, is a collection of tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Much later, in Roman times a roman called Apicius compiled a number of documents describing recipes prepared by his fellow Romans. In his publication, Apicius describes how the roman meals were separated into starters, main meal and afters, a style of dining still practiced today. Additionally, he tells us how the ancient cooks were skilled in the use of many aromatic flavours, including a few that will be familiar to modern chefs such as thyme, mint and parsley. Later on, in the 15th century, people returning from the crusades brought us many spices and herbs from the Middle-East, including spices like rosemary and coriander. These new culinary innovations was responsible for an eruption in manuscripts on cooking, many of which are kept safe in private cookery archives. Over the succeeding few hundred years, the rich and powerful families of Wesstern Europe competed with each other to serve up the most exotic banquets, and as a result the best chefs and their recipe collections were greatly in demand. Notwithstanding that, it was during the 19th century that cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to collecting, trying out, and publishing popular recipes of the day. When we get to the twentieth century, cookery books were in great demand, mostly due to increased literacy, people having increased spare time and being a little richer. |
