The History of Recipes
We are able to read the history of `recipes` back into history, in truth as far back into recorded history as pharonic Egypt, and maybe even further. Having said that, in the main part, these old cookbooks were just primitive pictorial instructions for meal preparation.
Fascinatingly, the oldest recipe discovered so far, according to academics is a collection of clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. During the time of the Roman Empire a man called Apicius compiled a few documents describing recipes enjoyed by wealthy roman citizens. In his works, he recounts how the meals were separated into hors d`oeuvres, entrees and afters, a style of dining still practiced today. Aspicius tells us how the Roman chefs used many spices, including a few that are still present in modern kitchens such as thyme, rue and asafoetida. As our culinary historical trip moves on a few more years there are a couple of interesting books which date from the 1300s ; a cookery book entitled `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, these books have no connection with the spicy food that is popular today, but instead descriptions of the types of meals prepared for the rich and powerful of the period. In the fifteenth century, the Crusaders brought back many spices and herbs from Arab cuisine, including spices such as rosemary and coriander. These new foods and tastes caused an outbreak in manuscripts on cookery, many of which are now in academic collections. By the arrival of the 20th century, cooking books were in high demand, mostly due to higher levels of literacy, leisure time and having more disposable income. Like it or not, the introduction of television brought us cooking programs and the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes like the ones you can find on this recipe site. |
