The History of Recipes
We are able to trace the history of meal recipes way back into the far past, certainly as far back into history as the ancient Egyptians, and possibly even further. Interesting though that maybe, these, early recipes were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
As we move into Roman times 25BC a roman called Apicius assembled a collection of documents detailing recipes enjoyed by the Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvres, entrees and desserts, something that is very familiar to us today. This early Roman chef informs us how the Romans were skilled in the use of a wide range of herbs and spices, including some familiar names such as bay, rue and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back a variety of spices and herbs from Arab cooking, such as coriander, parsley, and basil. The introduction of these new herbs and spices caused a surge in books on cookery, some of which are kept safe in academic collections. By the advent of the 20th century, cooking books are highly popular mostly due to more people being able to read, more free time and having more money to spend. |
