Chicken Liver Terrine Recipe


Ingredients

1 cup butter
1 small onion -- chopped
1 clove garlic -- minced
1/4 cup diced celery
1 lb chicken livers
1/2 tsp salt
1 pinch cayenne pepper
1/2 tsp ground nutmeg
1/4 tsp ground cloves
2 tbsp cognac


Directions

Melt 1/4 cup butter in a skillet. Saute onions, garlic, and celery
until just soft. Add livers and cook until done. Drain liquid and
cool. In a blender or food processor, puree liver mixture. Add
seasonings and remaining butter. Process until well combined. Pack
into 1-1/2 pint terrine and chill thoroughly.

Additionally, he recounts how the ancient cooks were skilled in the use of a wide range of aromatic flavors, including a few that will be familiar to modern cooks such as thyme, mint and asafoetida.

Over the succeeding few centuries, the powerful and rich competed to lay on the most extravagent meals, and because of this cooks and their collection of recipes were highly sought after. Nevertheless, it was during the 1800s that fine cooking and recipe books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to assembling, trying out, and publishing recipes for their fellow cooks to enjoy.

When we get to the 20th century, cookbooks are highly popular mostly as a result of higher levels of literacy, more spare time and being a little richer.

The TV revolution gave us TV cooks and the demand for the accompanying recipe books.
