Ingredients
4 boneless chicken breasts
3/4 tsp salt
1/4 tsp pepper
2 tbsp flour
3 tbsp butter
1/2 cup dry marsala wine
1/2 cup water
Directions
Sprinkle chicken with salt and pepper; roll in flour. Over medium-high
heat, melt butter. Cook chicken until golden on both sides. Remove
chicken. Reduce heat to low. Stir wine and water into drippings,
scraping to loosen any brown bits. Return chicken to skillet. Cover,
simmer about 30 minutes.
I usually make a little more sauce and personally like to increase
the wine over water mixture a bit.

The History of Recipes
We can read the history of written recipes far back into the distant past, at least as far back as the Egyptians, and maybe further still. Interesting though that maybe, in the main part, these ancient records were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
In fact, the oldest recipe in existence, according to food historians are some clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Progressing into Roman times around 25BC a roman called Apicius created a collection of scripts detailing recipes cooked by wealthy Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvre, main course and desserts, something that is very familiar to us today. He also describes how the early Romans used many different spices and herbs, including a few that will be familiar to modern chefs for example basil, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought us many foods, spices and herbs from Arab cooking, including coriander, basil and rosemary. The introduction of these new herbs and spices prompted an increase in books on cooking, some of which are now in private libraries. The introduction of the TV gave us TV cookery programs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everybody to search through thousands of recipes like those on this site. |
