The History of Recipes
It is quite feasible to follow the history of written cooking instructions way back into ancient history, in truth as far back as the Egyptians, and possibly even further than that. However, generally, these ancient cookbooks were just basic hieroglyphic or cunieform recipes for preparing food.
Interestingly, the most ancient recipe discovered so far, according to experts in ancient history are a few ancient tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. As we move into The time of the romans 25BC a man called Apicius assembled a collection of scripts showing how to cook the recipes prepared by his fellow Romans. In his scrolls, he describes how the roman meals were split into starters, main meal and dessert, something we still use today. Aspicius tells us how the cooks of his times used many different aromatic flavours, including a few that are still present in modern kitchens such as basil, mint and parsley. During the next few hundred years, the powerful families of the West strove to serve the most extravagent banquests, and because of this the best cooks and their recipes increased in prestige. Even so, it was during the 19th century that haute cuisine and recipe books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to assembling, trying out, and recording recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, recipe books are starting to become popular as a result of higher levels of literacy, more leisure time and a general increase in wealth. Like it or not, the introduction of TV brought us celebrity TV chefs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes like those on sites such as the one you are reading now. |
