The History of Recipes
It is quite possible to trace the history of recipes way back into history, certainly as far back into history as the Egypt of the Pharoahs, and potentially, even further back. However, these, early records were just simple pictorial instructions for meal preparation.
Interestingly, the oldest recipe discovered, according to food historians is a collection of clay tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. During Roman times 25BC a roman called Apicius compiled a collection of scripts detailing recipes enjoyed by the Romans. In his works, Apicius tells us how the meals were separated into starters, main course and afters, a very modern way of dining. Additionally, he describes how the cooks of his times used many herbs and spices, including some that we all recognise for example basil, mint and asafoetida. During the succeeding few centuries, the rich and powerful families of Europe competed to serve up the most extravagent banquests, and consequentially the best chefs and their recipes could command a high salary. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collating, trying out, and publishing popular recipes of the day. Like it or not, the introduction of television brings us cooking programs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, allowing everyone to access thousands of recipes like those on sites such as the one you are reading now. |
