The History of Recipes
Food historians have traced the existence of recipes back into distant history, at least as far back into history as ancient Egypt, and maybe further still. In practice though, in the main part, these early records were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
As we move into The time of the roman empire 25BC a man called Apicius compiled a number of scripts describing recipes prepared by the Romans. In his publication, he tells us how the meals were divided into hors d`oeuvre, main meal and dessert, a style of dining still practiced today. Aspicius describes how the ancient cooks used many different aromatic flavors, including a few that will be familiar to modern chefs such as bay, mint and asafoetida. Over the following few hundred years, the wealthy families of Wesstern Europe competed with each other to offer the most exotic meals, and as a consequence, the best cooks and their collection of recipes were at a premium. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to assembling, trying out, and publishing popular recipes of the day. By the arrival of the 20th century, recipe publications are in great demand, mostly due to more people being able to read, people having more leisure time and having more money to spend. |
