Ingredients

3 avocados, ripe
1/4 cup orange juice
2 cup chicken, cooked and diced
2 oranges, section and dice
1 cup celery, diced
1/2 cup mayonnaise
3 tbsp chili sauce
1/8 tsp paprika
1 tsp salt
2 tbsp pimento, chopped
Directions
Peel avocados, cut in half lengthwise and brush with orange juice.
Combine chicken, oranges and celery. Combine mayonnaise, chili sauce
and seasonings. Add chicken mixture and blend thorougthly. Fill
avocado halves with chicken mixture and top with chopped pimento.
Serve on a bed of salad greens and garnish with additional orange
sections.

The History of Recipes
It is possible to track the history of `recipes` far back into the far past, in truth as far as early Egypt, and potentially, even further back. Interesting though that is, mostly, these early records were just very basic hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe found, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. Later on, in The time of the roman empire 25BC a roman called Apicius created a number of documents which described recipes prepared by wealthy Romans. In his works, he describes how the meals were separated into hors d`oeuvre, main course and afters, a very modern way of dining. Aspicius tells us how the early Romans used many spices and herbs, including some familiar names like thyme, mint and asafoetida. For the decades that followed, the families of Europe tried to lay on the most extravagent meals, and as a result the best chefs and their collection of recipes were highly sought after. However, it wasn`t until the nineteenth century the formal cooking and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collating, testing, and writing down recipes to help cooks of their time. By the time we get to the 1900s, cookbooks were increasing in popularity mostly as a result of increased literacy, people having increased spare time and being a little richer. |
