The History of Recipes
We are able to follow the history of written recipes way back into the distant past, in fact as far back into history as the Egypt of the Pharoahs, and maybe further still. In practice though, sadly, these ancient recipes were just very basic hieroglyphic recipes for preparing food.
The truth of the matter is, the most ancient recipe in existence, according to historians is a series of clay tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. As we move on, there are some books published in the 14th Century - one book called `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, these books have no connection with the spicy food that appears on menues today, but instead recipes for the types of food prepared by the cooks of the rich and powerful of those days. Later, in the fifteenth century, the Crusaders brought back a variety of foods and spices from Arab countries, including coriander, parsley, and rosemary. These new culinary innovations created an explosion in manuscripts on cookery, some of which are kept safe in private libraries. During the following few hundred years, the powerful families of the West strove to serve up the most extravagent banquests, and as a consequence, the best cooks and their recipes were much in demand. Notwithstanding that, it wasn`t until the 19th century that cooking and recipe publications reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to assembling, trying out, and recording popular recipes of the day. By the time we get to the 1900s, recipe books are greatly in demand as a result of more people being able to read, people having more leisure time and having more money. The arrival of television brought us TV chefs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes just like those on sites such as this. |
