Chicken Salad Log Recipe


Ingredients

8 oz pkg cream cheese
2 tbsp lemon juice
1/4 tsp ground ginger
4 drops red pepper sauce
2 hard-cooked eggs, chopped
1/4 cup mayonnaise
1/2 tsp salt
1/8 tsp pepper
2 cup finely chopped cooked
1 chicken
1/4 cup sliced green onion
1 chopped black olive, chopped
1 pimento, seasame seed, and
1 green onion to garnish.


Directions

Mix all ingredients and chill 4 hours. Shape into a 8x2-inch log,
then garnish covering the 1/4 of the log in toasted seasame seed, the
next 1/4 of the log with green onion, the next 1/4 of the log with
chopped pimento, and the final 1/4 of the log with chopped black
olive. Serve as a spread with crackers or bread of your choice.

Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to collating, verifying, and recording popular recipes of the day.

The TV revolution brings us TV chefs and the demand for the spin-off recipe books.
