The History of Recipes
Experts have traced the existence of recipes back into the distant past, in truth as far back into recorded history as ancient Egypt, and maybe further still. Having said that, generally, these ancient recipes were just simple pictorial instructions for preparing meals.
Fascinatingly, the most ancient recipe found, according to food historians is a series of ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful. During the time of the Roman Empire a man called Apicius assembled a number of scripts which described recipes prepared by the Romans. In his scrolls, he recounts how the meals were split into hors d`oeuvres, main course and afters, something that is very familiar to us today. Additionally, he describes how the Roman cooks were skilled in the use of many different herbs and spices, including a few you will know like bay, rue and dill. In the fifteenth century, the Crusaders brought back many new spices and herbs from the East, including parsley, basil and rosemary. These new foods and spices caused a torrent in manuscripts on cookery, some of which still exist in private libraries. Over the following few hundred years, the powerful families of Wesstern Europe tried to lay on the most exotic meals, and as a result the best cooks and their collection of recipes were at a premium. Nevertheless, it wasn`t until the nineteenth century the formal cooking and recipe publications really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collating, verifying, and publishing recipes to help cooks of their time. By the arrival of the 20th century, recipe publications were increasing in popularity mostly due to increased literacy, people having more spare time and having more money to spend. |
