The History of Recipes
Academics have tracked the existence of recipes back into distant history, in fact as far back into history as the ancient Egyptians, and maybe even further. Interesting though that maybe, these, old cookbooks were just very simple pictorial instructions for preparing meals.
Fascinatingly, the most ancient recipe discovered, according to food historians is a collection of stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. As our culinary historical trip moves to more modern times we have a couple of books dating from the 1300s : a book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Although the titles sound familiar, these books have no connection with the spicy food that is familiar to us all today, but instead descriptions of the types of meals cooked for the rich and powerful of the period. In the 15th century, knights returning from the crusades brought us a variety of spices and herbs from the holy land, including spices such as parsley, basil and rosemary. The introduction of these new herbs and spices created an outbreak in manuscripts on cookery, most of which are now in private collections. Over the next few centuries, the wealthy families of Europe strove to serve the most exotic banquets, and consequentially chefs and their collection of recipes could command a high salary. Even so, it wasn`t until the 1800s the formal cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to collecting, testing, and recording recipes common in their social group. By the arrival of the twentieth century, recipe books were greatly in demand mostly due to better eduction, leisure time and having more money to spend. The introduction of television brought us TV chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes such as those found on this site. |
